Polish food?

I need a yummy Polish dessert recipe for a school project I'm doing. Something sweet that can be served in bulk (like cookies!) is what I'm looking for.

Polish food?
I had this cake at a local restaurant's Polish theme night recently. It was DELICIOUS!! (yes, it really contains just 3 tablespoons of flour - it is primarily poppy seeds)








Makowiec (Poppy Seed Torte)





1½ lb. Poppy seeds


5 c. water


12 eggs, separated


2. Fine sugar


3 Tbsp. Flour


1 tsp baking powder


rind of 1 lemon, grated





Icing:


3 Tbsp hot milk


1 c. walnuts, ground


1 c. unsalted butter


1 c. icing sugar


1 tsp. vanilla


apricot preserves





Preheat oven to 350 degrees F.





Boil poppy seeds in water for 5 mins. Drain through a cheesecloth for a few hours. Then grind through a fine grinder.





Beat egg yolks until foamy. Add sugar gradually and beat until fluffy. Add ground poppy seed and flour (which has been sifted w/ baking powder); blend well. Beat egg whites until stiff peaks form. Add lemon rind. Pour egg yolk mixture in a thin stream over the entire surface of the beat egg whites and mix lightly until completely blended.





Bake in 3 greased and floured 8" layer cake pans for 30 minutes.





Icing:


Pour boiling milk over walnuts. Mix until blended; set aside to cool. Cream butter; add sugar gradually and beat until light and fluffy. Add walnut mixture and vanilla and blend well.





Spread first layer with apricot preserves. Place next layer over it and spread with butter-walnut mixture. Place third layer over and ice with the remaining icing.

1 cup butter, softened,no subs


1/2 cup sugar


1 egg


1 teaspoon almond extract


2 1/3 cups flour











Cream butter; gradually add sugar and beat until light and fluffy.


Beat in egg and almond ext.


Gradually blend in flour.


Roll out on floured surface; cut with cookie cutters.


Place on ungreased cookie sheets.


Bake at 350* for 8 minutes.


Remove at once to wire rack.

1 cup pitted prunes


1 lb Mixed dried fruit


(pears, figs, apricots and peaches)


5 cups water


1/2 cup raisins


1 lemon peel


1 teaspoon lemon juice (optional)


6 cloves, whole


1 tablespoon sugar


1 cinnamon stick


Heart Bowl








Combine water, mixed dry fruits, prunes, and raisins in a pot large enough to hold all the ingredients. Let stand for 2 hours. Stir in sugar, cinnamon and cloves. Bring to a boil, cover and then simmer for about 25 minutes (or until the fruits are plump and tender). At the end stir in the lemon peel. Add the lemon juice to taste. Let stand 15 minutes.





Polish Apple Cake (Szarlotka)





6 medium apples (washed, peeled and chopped)


1/2 cup sugar


3/4 cup raisins


3/4 cup toasted almonds 1 teaspoon lemon juice





2 eggs


2 tablespoons ground up flax seeds


1/2 cup oil


2 cups flour


1/2 cup quick cooking oats


1 teaspoon baking soda


1 teaspoon baking powder


1/4 teaspoon almond extract


ground cinnamon (optional)





Place the apples in a large bowl and sprinkle with sugar and lemon juice. Set aside. Mix the flour, oats, baking soda and baking powder in a medium bowl. Add cinnamon. In a separate bowl mix the eggs, flax seeds, oil and almond extract. Combine egg and flour mixture and mix well. Fold in the fruit, nuts and raisins. Mix very well. You can add some more if the mixture is extremely wet (but it WILL be wet).


Put into a Large Baking Dish and smooth out the top. Bake in a preheated oven at 350F for about 1 hour until risen and skewer inserted into the center comes out clean. Take out of the oven and cool in the baking dish.
